How to make it
Muddle three ripe strawberries with the simple syrup in the bottom of the shaker until they give up completely.
Add the lime juice and a small handful of ice, then shake for 8 seconds, just enough to chill and marry it.
Double strain into a wine glass full of fresh ice.
Top with cold prosecco and a splash of club soda.
Garnish with a strawberry on the rim and a slapped mint crown.

How to present it
Wine glass, pink-red gradient, strawberry notched on the rim. It looks like considerably more work than it is, which is the best kind of cocktail. Make it when strawberries actually smell like strawberries at the store.

Swaps & variations
Vodka instead of prosecco turns it from a spritz into a smash, add an ounce and lose the bubbles. Frozen strawberries work if you thaw them first, they actually muddle easier. Balsamic sounds insane but two drops next to strawberries is an old Italian trick worth trying once.
