How to make it

  1. Cook the bacon first. Crisp, not floppy, it has a job to do as a garnish and a chaser.

  2. Combine the Irish whiskey and butterscotch schnapps in a shaker with ice and give it a short, cold shake.

  3. Strain into shot glasses.

  4. Pour a small glass of cold orange juice next to each shot.

  5. The ritual: shoot the whiskey-butterscotch, chase with the orange juice, bite the bacon. In that order it tastes exactly like pancakes with breakfast sausage. Out of order it tastes like a mistake.

The serve

How to present it

Serve each one as a little place setting: shot, juice chaser, bacon strip laid across the top like a spoon rest. Walk the table through the order before anyone goes rogue. Best deployed at brunch, tailgates, or the morning after a wedding.

Make it yours

Swaps & variations

Maple syrup rimmed on the shot glass gets you closer to the waffle house. Butterscotch schnapps is the load-bearing wall here and has no substitute, but the whiskey is flexible, bourbon works fine. There is a virgin version, it is called breakfast.
