How to make it

  1. Chill your glasses in the freezer for at least 15 minutes before you start, because this drink has no ice in the glass and it goes lukewarm and sad in a hurry.

  2. Stir the simple syrup and vanilla extract into the rum in your shaker tin first, on their own, so the sugar dissolves fully before the dairy shows up and dulls your ability to taste it.

  3. Add the whole milk and heavy cream, fill with ice, and shake hard for 12 seconds. You want a soft foam cap and a body that pours like thin cream, not a stiff milkshake, so stop before the ice shatters into slush.

  4. Double strain into the chilled coupes and let them sit 30 seconds. The foam separates into a thin pale collar on top, which is the surface your garnish needs to sit on instead of sinking.

  5. Grate fresh nutmeg over the foam, then add a small pinch of freshly ground coriander. The coriander brings a citrus-peel brightness that keeps the cream from tasting heavy, and it is the whole reason this version tastes different from the one at brunch.

  6. Serve immediately. If a glass sits more than five minutes the foam breaks and you get a grey ring at the edge, at which point pour it back in the tin, add three ice cubes, and shake it again.

Serve in small chilled coupes, no more than five ounces each, because this drink is rich and a big glass turns it into a chore. Grate the nutmeg dead center so it sits in a tight rust colored disc on the pale foam, then float the coriander right on top of it. This is an after dinner or a lazy late morning drink, and it looks best set out three at a time on a pale stone counter with a nutmeg and a microplane left beside the tray so guests can dust their own second round.

Swaps & variations

Swap the dark rum for bourbon and you have the New Orleans brunch standard, or split the base half rum and half coffee liqueur for something closer to dessert. A zero-proof version works better than you would expect: use 2 oz of strong cold brewed black tea plus a bar spoon of blackstrap molasses in place of the rum, keeping the same dairy and spice. For a frozen version, blend everything with 1 cup of ice and a small scoop of vanilla ice cream, then dust the spices on top of the frozen peaks so they do not disappear.
