How to make it

  1. Run half a green apple and a short length of cucumber through the juicer. You want about an ounce of each, and the apple's natural sweetness is the reason this drink barely needs syrup.

  2. Muddle two cucumber ribbons in the shaker, gently, cucumber gives up its water without a fight.

  3. Add the gin, lime juice, both fresh juices and a bare quarter ounce of simple syrup. Taste the apple juice first, a sweet apple can carry the drink on its own.

  4. Fill with ice and shake hard for 12 seconds.

  5. Double strain into a chilled coupe, the mesh catches the juicer pulp.

  6. Garnish with a thin apple fan and a cucumber ribbon on a pick. The fruit that went through the juicer shows up on the rim, that is the house style.

How to present it

Chilled coupe, pale green, one elegant ribbon. It looks like a spa treatment and drinks like a proper gimlet. This is the cocktail for the guest who says they do not like gin, it converts one per party.

Swaps & variations

Vodka makes it even cleaner if gin still is not landing. A few mint leaves in with the muddle turns it toward a garden party. Swap the simple for honey and it rounds out beautifully, and three slices of jalapeno in the shaker make a spicy version that sneaks up politely.
