How to make it

  1. Into the blender or shaker: white rum, blue curacao, coconut cream, lime juice and the pineapple juice. If you own a juicer, run fresh pineapple through it instead of opening a can, the fresh juice's acidity cuts the coconut cream so the drink stays bright instead of going milkshake.

  2. Blending? Add a cup of ice and run it until smooth. Shaking? Go hard for 12 seconds and strain over crushed ice.

  3. Pour into the tallest glass you own.

  4. Garnish with a wedge of the pineapple you juiced and a cherry on a pick, and yes, the umbrella.

  5. Serve with a straw long enough to reach the bottom.

How to present it

This drink is a postcard. Hurricane glass, impossible blue, fruit riding the rim. Do not attempt to make it tasteful, the color already made that decision for you. It wants a pool, but a kiddie pool counts.

Make it yours

Swaps & variations

Swap the coconut cream for coconut rum and it gets lighter and boozier, that version is technically a Blue Hawaii, a different drink that everyone confuses with this one. Vodka can stand in for the rum. And if blue curacao offends your dignity, plain orange liqueur makes it a Pina Colada in a witness protection program.
