How to make it
Fill a big wine glass all the way with ice. A spritz with three cubes is a warm spritz in ten minutes.
Pour in the prosecco first, this is the Venetian order and it keeps the Aperol from sinking into a stripe at the bottom.
Add the Aperol, then the club soda.
One gentle stir, top to bottom.
Light the tip of the rosemary sprig for two seconds, blow it out, and lay it across the rim with an orange slice.
The serve
How to present it
Big-bowled wine glass, mountain of ice, orange slice, and the little thread of rosemary smoke curling up when it lands on the table. It is a 5pm drink and it knows it. Serve with salty snacks, olives or chips, because bitterness and salt were made for each other.
Make it yours
Swaps & variations
Swap Aperol for Campari and it grows up fast, twice as bitter and a shade darker. Grapefruit juice instead of club soda makes a fuller, brighter glass. And a spritz made with lemonade instead of prosecco is a fine zero-proof stand-in for the designated driver.
