How to make it

  1. Remember the rhyme: one of sour, two of sweet, three of strong, four of weak. It is the oldest recipe format in the Caribbean and it still works.

  2. Into the shaker: both rums, orange juice, pineapple juice and lime juice.

  3. Shake with ice for 10 seconds.

  4. Strain into a tall glass over fresh ice.

  5. Pour the grenadine down the inside wall so it sinks and layers the bottom red.

  6. Garnish with an orange wheel. Serve as the layers slowly bleed into a sunset.

How to present it

Tall glass, red-to-gold gradient, orange wheel. Let the drinker watch the colors mix as they go, stirring it immediately is a crime of impatience. Doubles beautifully into a pitcher for a crowd, keep the grenadine pour per-glass for the effect.

Make it yours

Swaps & variations

All dark rum makes it heavier and rounder, all white makes it a beach drink. A few dashes of Angostura on top add spice and an aromatic nose. Swap the grenadine sink for a dark rum float and the sunset flips upside down.
