How to make it

  1. Salt half the rim of a tall glass and fill it with ice.

  2. Add tequila, grapefruit juice, lime juice and agave straight to the glass, this one builds in the glass like a ranch water, no shaker needed.

  3. Stir just enough to introduce everyone.

  4. Top all the way with cold sparkling mineral water, Topo Chico if your store carries it, the bubbles are sharper.

  5. Garnish with a grapefruit wedge and drink it faster than you meant to.

Tall glass, aggressive bubbles, half salt rim. This is the lightest margarita in the house, built for triple-digit afternoons. Keep the mineral water glacial until the last second, flat bubbles are the only way to ruin it.

Skip the grapefruit juice and agave and you have a true ranch water, tequila, lime and Topo Chico, the official cocktail of not overthinking it. A splash of orange liqueur fancies it back up. Mezcal works here too, because mezcal works everywhere.
