How to make it

  1. Chill your coupe in the freezer before anything else, an absinthe sour drunk warm is a punishment, not a drink.
Slap six mint leaves against your palm and drop them in the shaker. You want the oils awake, not the leaves shredded.
Add the absinthe, lemon juice, mint syrup, simple syrup and egg white, then dry shake without ice for a hard 15 seconds to build the foam.
Crack the tin open, fill it with ice, and shake again until the metal frosts over, about 12 seconds more.
Double strain through a fine mesh into the chilled coupe so no ice chips or mint flecks puncture the foam cap.
Let it rest 30 seconds, the head sets into a tight white cloud. A tiny splash of club soda through the middle lifts it even higher.
Finish with three drops of mint syrup on the foam and drag a toothpick through them for the swirl.

The serve

How to present it

Serve it in a frozen coupe, held by the stem, never the bowl, heat is the enemy here. The foam is the show: it should sit a finger high and hold the syrup swirl like latte art. Slap a small mint crown awake and float it dead center. This is a slow, first-course drink; tell your guest the anise opens up as it warms, so sip it, don't shoot it.

Swaps & variations

No absinthe on the shelf? Herbsaint or Pernod give you the anise without the bite, and half an ounce of Green Chartreuse instead takes it somewhere herbal and glorious. Skip the egg white and top with soda for an absinthe-mint fizz that drinks lighter on a hot day. Vegan? An ounce of aquafaba straight from the chickpea can foams up almost identically, my blind-taste record on that swap is honestly embarrassing.
